Blueberry Pancakes
Ingredients

2 dates, soaked
1 cup blueberries
1 1/4 cup almond milk
1/2 cup buckwheat flour
1/2 cup cooked quinoa
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tbsp coconut oil

Instructions

1. Add all ingredients, except the blueberries, to a food processor. Pulse until smooth.
2. Fold in blueberries
3. Use a non-stick frying pan over a medium heat. Melt coconut oil, add pancake batter.
