2 tbls grapeseed oil
2 roasted chicken breast, cut into strips
1 medium onion, diced
2 cloves of garlic, minced
2 red chili pepper, seeds removed and minced
1 red bell pepper, seeded and cut into strips
1 green bell pepper, seeded and cut into strips
1 zucchini, cut into strips
6 whole grain wraps or corn tortillas
1/2 cup light sour cream
1/2 cup guacamole
1/2 cup salsa
6 green onions, sliced
1. Heat oil in a heavy skillet. Add onions, garlic and chili peppers for about 2 minutes.
2. Add other bell peppers and zucchini. Continue cooking over high heat for about 4
minutes, the vegetables will have a blackened look around the edges.
3. Add chicken to the skillet. Cook until chicken is warm.
4. Assemble wraps by placing the desired amount of the hot chicken mix in the centre of the
wrap. Add desired topping, guacamole, salsa, and/or green onion.
