Cocoa Energy Bites

2 tablespoons virgin coconut oil, melted
3 tablespoons unsweetened cocoa powder
2 tablespoons unpasteurized honey
1 teaspoon pure vanilla extract
1/4 cup almond or almond/hazelnut butter
1/4 cup finely ground sunflower seeds
1/4 cup hemp seeds
1/2 cup unsweetened and non-sulfite shredded coconut
1/2 tablespoon of maca powder (optional)
additional coconut and hemp seeds to roll the balls in


1. Combine coconut oil, cocoa powder, honey, vanilla and nut butter; mix well.
2. Stir in the remaining ingredients until well-blended. Shape/roll into ¾ inch balls and then
roll in additional coconut.
3. Store in an air-tight container in the fridge.
4. Makes about 25 balls.
