Greek Salad with Roasted Chicken Breast

1/4 cup plus 2 tbls extra virgin olive oil
1.5 tbls lemon juice, freshly squeezed
1 tbls red wine vinegar
2 cloves of garlic, minced
1 tsp dried oregano
salt and pepper to taste

Roasted chicken breast, sliced lengthwise into strips
1 head of Romaine lettuce torn
3 large plum tomatoes, seeded and coarsely chopped
1 English cucumber, coarsely chopped
1 medium red onion, cut into rings
1 small green pepper, diced
1/4 cup crumbled feta cheese


1. Whisk all dressing ingredients together and set aside
2. Place all salad ingredients (except cheese and chicken breast) in a large bowl and toss
with dressing.
3. Sprinkle cheese and top with warm chicken breast strips.
