Jerk Pork Tenderloins with Cauliflower Rice

2 pork tenderloins, sliver skin removed
3 tbls of Jerk rub


1. Coat pork tenderloins with Jerk rub. Cover and place in refrigerator for at least 1 hour.
2. Preheat over to 350F. place pork in a roasting pan. Cook covered until the pork has an
internal temperature of 71C or 160C. About 35 minutes.
3. Remove from oven, let rest for 15 minutes.
4. Slice into ½ inch thick medallions
