Panko Encrusted Tilapia and Coconut Rice

2 cups panko
2 eggs, beaten
3 tbls coconut oil
6 tilapia fillets
Salt and pepper


1. Season panko with salt and pepper. Spread panko on a plate.
2. Dip each fillet in the egg and coat with panko.
3. In a large non-stick skillet on a medium-high heat, melt coconut oil.
4. Fry fish for about 3 minutes on each side.
