1 cup sliced carrots
1 cup mix beans
1 cup broccoli and/or cauliflower florets
2.5 cups uncooked pasta, such as penne
1 avocado diced
1 chopped green onion
1/4 cup rice vinegar
2tbsp sesame oil
1 tbsp tamari
2 tsp grated ginger
1/4 tsp toasted sesame oil
1. Cooked pasta according to directions on packaging and cool under cold water.
2. In a blender, combined the dressing ingredients.
3. In a large bowl, toss pasta, vegetables and dressing. Serve.
