1/2 cup quinoa (rinsed well)
1 cup almond milk
1 tsp natural vanilla
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup blueberries or mixed berries (fresh or frozen)
Sucanat (to taste)
1. In a small saucepan over a medium-high heat, add quinoa, almond milk and vanilla. Bring
to a simmer.
2. When the ring around the quinoa grain is visible, it is cooked. Add cinnamon, nutmeg and
berries. You can add more almond milk if you prefer a thinner oatmeal.
3. Serve hot.
